Baby bancha, also known as baby cold brew bancha, is a tea that has been popular in Omi (Shiga) since ancient times. We use extremely valuable spring bancha, which is made by contracted farmers in Koka City, Shiga Prefecture (Asamiya, Tsuchiyama) without the use of pesticides during the picking period.
Unlike hojicha, it has a unique aroma and refreshing taste, and is made using a special manufacturing method that involves steaming the harvested tea leaves without rolling them, drying them in the sun, and then roasting them in a pot.
Almost no caffeine or tannins are extracted, so it can be safely consumed by babies, the elderly, and those receiving medical treatment.
There are two types of bancha: autumn bancha, which is harvested from September to November, and spring bancha, which is harvested during the mid-winter period from February to March. Autumn bancha is characterized by thin tea leaves and a light, astringent taste, while spring bancha is characterized by thick, durable tea leaves and a deep, sweet taste.
Spring bancha is full of good things, such as no pesticides are used during this time because there are no pests in the winter, and excellent ingredients are stored in the tea leaves during the harsh winter, but the yield is very low. It is said to be a tea that is rare and difficult to obtain.
<Basic drinking method>
・In case of cold brew
Add 1 to 2 bancha tea bags to 1 liter of water.
Leave it to soak for about 7 to 8 hours overnight and it's done.
Warm and enjoy according to your preference.
・How to boil in a kettle
Turn off the heat and add 1 to 2 bancha tea bags to about 2 liters of boiling water.
